About the Fermentary

Zorzal Estate is part of Reserva Zorzal, a 1,000-acre private bird sanctuary and organic cacao farm in the northern mountains of the Dominican Republic. Working alongside sixteen neighboring farms, Zorzal demonstrates how conservation and agriculture can work together. Seventy percent of the reserve is permanently protected as wild habitat, supporting biodiversity while producing exceptional cacao.

About the Region

Cacao has been cultivated in the Dominican Republic since the seventeenth century. Following independence, cacao became one of the nation's most important exports. Agricultural modernization in the 1990s helped establish the country as a global leader in organic cacao production, a distinction it continues to hold today.
